2012 will be remembered for its absolute absence of rain, with constantly high temperature – surely higher than the average of the last few years. This phenomenon prevented the proliferation of fungal agents and brought to a good sugar/acid balance in the ripening process, with grape must of high potential alcohol. The content of polyphenols was also high and it was our care to extract and stabilize these compounds during the skin-contact of our red musts. Because of these climatic conditions we had an early ripening of the grapes and so we started to pick them at least 3/4 weeks earlier.
From the first vinifications we noticed that the grapes had a much lower percentage of juice than usual and the production was also less, which makes vintage 2012 one of the poorest in the last 50 years but surely one of the highest in terms of quality.
