Barley, emmer, Cook each kind of legumes separately; then mingle them to make a soup. Stew the Catalogna chicory and put it on a plate; place the Pecorino upright, the strips of smoked colt, the slices of grilled bread in order to give the plate a certain movement; sprinkle extra virgin olive oil in the end.
