Production area:
San Marzano, Salento, Puglia. At almost 100 meters above the sea level, with a high average temperature and very few rainfall during the year. The soils are mainly composed by clay, with an average depth which reaches up to 1 meter
Harvest period: Second decade of September
Vinification: Skin contact for few hours, then partial drawing off of the must of Negroamaro grapes, and finally the same fermentation as
white wine
Maturation: In stainless-steel
Tasting notes: Intensely rose-coloured with ruby red reflections, intense and persistent aroma, fruity with cherry and raspberry scent. Full-bodied wine, fresh and balanced to the mouth
Best served with: Italian style starters, fish soups, roasted or baked in foil fish, fresh or slightly aged cheese
