Production area: San Marzano, Salento, Puglia. At almost 100 meters above the sea level, with a high average temperature and very few rainfall during the year. The soils are mainly composed by clay, with an average depth which reaches up to 1 meter
Harvest period: Between the first and the second decade of August
Vinification: Skin contact for 24h, then destemming followed by alcoholic fermentation in stainless-steel tanks at 12/14°
Maturation: In stainless-steel
Tasting notes: Straw yellow colour with bright hints, intense and persistent to the nose, fruity with scent of golden apple, pear and peach. Very fresh and pleasant wine
Best served with: Excellent with starters, vegetable soups, egg dishes and seafruits
Serving temperature: About 12°C
